He trained at the University of Cambridge and London Hospital Medical College, where he earned his medical degree, with distinction, in 1995. After completing his training, this led him to Australia for a further period of research in a specialist IBD unit at Monash University in Melbourne. Whilst there, he played a pivotal role in pioneering research on the low FODMAP diet and, upon his return to the UK, he introduced this dietary approach, revolutionising the management of irritable bowel syndrome in the UK.
Professor Irving's commitment to advancing gastroenterology is evident through his active involvement in professional committees. He has previously served on the committee for the Inflammatory Bowel Disease (IBD) Section of the British Society of Gastroenterology and chaired the Education Committee of the European Crohn’s and Colitis Organisation. His expertise in the field is underscored by his extensive publication history, which exceeds 200 works. Furthermore, he is the author of three books, cementing his authority and contributions to the gastroenterological community.
